The pink tortilla color comes from the addition of beetroot juice to the masa dough, giving the tacos a vibrant and eye-catching appearance. Not only are they visually appealing, but they also pack a punch of flavor that will leave your taste buds wanting more.

How to make your own pink birria tacos

Start by making your birria in advance as this process takes about 3.5 hours.

To start working on the birria first you need to brown your choice of meat (such as beef or lamb) about 3 pounds, on a hot pot/skillet. once the outside of your meat chunks are browned, add 3 cups of water, I cup of chopped onion, 1/2 of chopped garlic cloves, chicken bouillon seasoning (optional) salt to taste, and a BIRRIA BOMB, for this recipe we use birriaqueenllc birria bomb in the heart shape. The addition of the bomb will make the birria taste authentic and makes the whole process so much easier thanks to its blend of spices. Once all the ingredients are in the pot, let boil in medium high heat for 20 minutes and then let simmer in the lowest heat setting for 3 hours until it's tender and juicy.

Next, assemble your tacos over pink corn tortillas, fill with the birria meat, top it with pink onions, chopped cilantro, sliced radishes, lemon juice and hot salsa if you'd like them spicy. Don't forget to serve it with a side of consome for dipping!

here's a breakdown of the ingredients for the birria meat:

  • 3 pounds of meat (beef or lamb)
  • 3 cups of water,
  • I cup of chopped onion
  • 1/2 cup of chopped garlic cloves
  • 1 tbs chicken bouillon seasoning (optional)
  • salt to taste
  • 1 heart shaped  BIRRIA BOMB 

Instructions:

1. Brown the meat.

2. Add the water, onions, garlic seasoning, and birria bomb.

3. Let boil for 20 minutes then low heat simmer for 3 hours the least. 

4. Enjoy a juicy and tender delicious birria.

How to make pink anything?

To add a beautiful shade of pink to the components of this taco such as the tortilla, onions and a side of pink rice, start by making your beet juice. Here's a breakdown of the ingredients and instructions: 

Ingredients:
  • Maseca flour and water for mixing
  • 1 cup of water
  • 1 beet root 
  • 1 cup of chopped onions
  • cooked white rice
  • salt to taste
Instructions:

1. Wash, peel, chop and boil the beet root in a little bit of water. Let boil for 5 minutes until tender. Remove from the fire.

2. Separate the beet water from the beet chunks, that's the beet juice you'll use to dye everything (tortilla dough, onions and rice)

3. For the tortillas mix the maseca flour with water as instructed in the package, but also add some beet juice and a bit of salt, mix and add beet juice a bit at a time till you get the color you desire.  

Once dough is ready, use a tortilla press to make a thin tortilla, then use any cookie cutter to cut a cute shape or leave as is. (as for me I love hearts so my little taquitos were heart shaped) In a pre-heated comal let your tortilla cook for about 30/40 seconds each side.

4. Add a bit of the beet juice to the chopped white onions and mix well, There you  have beautifully pink onions for topping.

5. To a freshly cooked pot of white rice, add a bit if the beet juice and mix really well trying not to over mix the rice to keep a loose consistency. the color varies depending on the amount of beet juice you add. and voila! Pink rice
